Ingredients:
2 small pork tenderloins
Olive oil
1 tsp. Simple Indulgence Simply Garlic
1-2 shallots
2 lbs. small red potatoes
1 lemon
Salt and Pepper
Directions:
Preheat oven to 400°F. Brush olive oil over pork filets and place in a baking dish. Rub with Simple Indulgence Simply Garlic and shallots. Squeeze lemon juice over the filets and sprinkle with salt and pepper. Using the Chef Series Pro Chef's Knife, quarter potatoes and coat them with olive oil, salt, and pepper. Place in baking dish around meat; place in preheated oven for 15 minutes. Lower temperature to 350°F, continue cooking until meat registers 165°Fon an instant-read thermometer and the outside is golden brown. Add hot water to the pan as the meat cooks and turn potatoes, once or twice during baking.
